Mexican carnitas, Chinese char siu, Italian porchetta, Korean samgyeopsal, Spanish jamón Ibérico, Hawaiian kalua pig, and good ol’ whole hog BBQ from the American South all showcase why so many diverse regions and cultures have coveted pork for its rich, comforting, deeply satisfying texture and flavor.
